Gluten Free Jam Tarts

These colourful gluten-free tarts are fun to make with children, as a treat for tea parties. Use a variety of jams for different coloured flavoured jam tarts.

Ingredients

1 quantity Genius Gluten Free Shortcrust Pastry

340g/ 12 oz raspberry, strawberry, blackcurrant or apricot jam

Method

  • 40 mins prep, 15 mins cooking

  1. Preheat the oven to 180°c

  2. Make the pastry and let it chill for 20 minutes.

  3. On a lightly floured surface, roll out the chilled pastry to 3mm thick. Cut out as many rounds as you can using a 7.5cm fluted pastry cutter. Bring the remaining pastry together, roll out again and cut out more rounds.

  4. Line 2x12 hole patty tins with the rounds of pastry and place 1 heaped teaspoon of jam in each. Do not overfill with jam.

  5. Bake the jam tarts on the middle shelf of the oven for 10-15 minutes, or until the pastry is crisp and light biscuit brown.

  6. Run a knife around the hot tarts and lift then out with a palette knife onto a wire rack to cool.
